Haitian Turkey  Stew (Turkey Sauce)

 


1 lb Turkey 
Salt (for cleaning)
Vinegar (for cleaning)
1 Fresh Lemon (for cleaning) 
2 Tablespoon Haitian Epis 
2 - 3 teaspoon Seasoning Salt 
2 teaspoon Kreyol Spice 
1 Herbaria Pepper 
2 Teaspoon Oil + 3 Tablespoon Oil 
1 - 2 Teaspoon Haitian Epis 
2 Garlic clove (Chopped) 
2 Cup Water 
1 Tablespoon Tomato Paste 
1/2 Green Bell Pepper 
1 Small Onion (Sliced) 


Direction 


  1. In a medium bowl, add in turkey and clean Turkey
  2. Squeeze fresh lemon, 1/4 cup vinegar, 2 teaspoon salt. Mix well. Let this sit for 10 minutes. Rinse and add in clean hot boiling water.
  3. Let it sit for 3 minutes. Pour out the water.


Marinate The Turkey

Season the turkey with Haitian Epis, Seasoning Salt, Kreyol Spice.  Mix well and add in herbaria pepper. Cover with plastic wrap and Marinate for 4 hours or overnight. 


Coving the Turkey 

  1. In a large saucepan add 2 teaspoons of oil. 
  2. Add in turkey, let this cook for 4 minutes 
  3. Add water into the saucepan. Let this cook for 20 - 30 on medium low minutes (add in 1 cup of water if the turkey water is reduce) 
  4. Remove turkey and sauce from the pan. Add in 3 tablespoons of oil.
  5. Add in turkey. Let them fry until each is slightly  brown. 
  6. Stir in tomato paste, let this cook for 2 minutes 
  7. Add in sauce from before and another 1 cup water. Let this simmer for 5 minutes (add in 1 teaspoon seasoning salt optional) 
  8. Add in green bell peppers and onion. Simmer for 10 minutes

Enjoy! 


This goes well with Rice, Plantain, Fritay, and etc.
