Curry Oxtails
Ingredients
1 lb Oxtail
1 Tablespoon Lemon
1 Tablespoon Vinegar
Boiling Water
1 Green Onion
3 Garlic clove (Minced)
1/4 Bell Pepper (red, yellow, orange, and green)
1 Habanero Pepper (sliced and whole)
1 Tablespoon Haitian Epis
1 Tablespoon Kreyol Spice
1 Teaspoon Garlic Powder
1 Teaspoon Black Pepper
1/4 Teaspoon Ginger
1 Tablespoon Seasoning Salt
1 1/2 Tablespoon Curry Powder
Thyme
2 Tablespoon Oil
4 - 6 Cups Water
2 Medium Carrot (sliced)
Direction
- Clean the oxtail with lemon, vinegar and rinse with boiling hot water.
- In a medium bowl add in oxtail and onion, garlic, bell peppers, habanero pepper sliced, Epis, Kreyol Spice, garlic powder, ginger powder, black pepper, seasoning salt, curry powder. Mix well.
- Cover and marinate 4 hours overnight.
- In a medium saucepan, add in oil and add oxtail. Let it brown for 3 minutes on each side. Add the peppers
- Add in water, cover and simmer for 1 1/2 - 2 hours until the oxtail is tender.
- Add in carrots, cook for 7 - 9 minutes
Served Warm
