Curry Oxtails 


Ingredients 


1 lb Oxtail 

1 Tablespoon Lemon 

1 Tablespoon Vinegar 

Boiling Water 


1 Green Onion 

3 Garlic clove (Minced) 

1/4 Bell Pepper (red, yellow, orange, and green)

1 Habanero Pepper (sliced and whole) 

1 Tablespoon Haitian Epis 

1 Tablespoon Kreyol Spice

1 Teaspoon Garlic Powder

1 Teaspoon Black Pepper  

1/4 Teaspoon Ginger

1 Tablespoon Seasoning Salt 

1 1/2 Tablespoon Curry Powder 

Thyme

2 Tablespoon Oil 

4 - 6 Cups Water 

2 Medium Carrot (sliced)

Direction 


  1. Clean the oxtail with lemon, vinegar and rinse with boiling hot water.
  2. In a medium bowl add in oxtail and onion, garlic, bell peppers, habanero pepper sliced, Epis, Kreyol Spice, garlic powder, ginger powder, black pepper, seasoning salt, curry powder. Mix well.    
  3. Cover and marinate 4 hours overnight.     
  4. In a medium saucepan, add in oil and add oxtail. Let it brown for 3 minutes on each side. Add the peppers  
  5. Add in water, cover and simmer for 1 1/2 - 2 hours until the oxtail is tender.
  6. Add in carrots, cook for 7 - 9 minutes

Served Warm
